Breakfast Yogurt Cones

Friday was our first day of summer vacation and my daughter wandered downstairs in the morning, far too early for someone who didn't have her alarm set for school, and asked me to make her a "surprise" for breakfast.  A quick review of our cabinets and fridge resulted in this recipe.  I think it's going to be a summer breakfast staple at our house.

Breakfast Yogurt Cones

  • Waffle cones
  • Plain, Greek yogurt
  • Fruit of your choice, cut into bite sized pieces.  We had peaches, but berries would be great too.
  • Honey (optional)
  1. Spoon fruit or berries into the bottom of waffle cone. 
  2. Layer yogurt and fruit into cones until it reaches the top of cone.
  3. For extra sweetness, you can drizzle some honey over the top of the cone.
  4. Eat!
Such a quick, simple, and healthy meal, and a total hit with the kids.
